Ingredients
For the Beetroot & Garlic Roast:
2 beetroot bulbs
1 head garlic
2 tbsp Olive oil
Salt & pepper
For the Sauce:
1 pack goat cheese
Zest of 1/2 lemon
1/4 tsp cumin
1/2 tsp chili powder
Olive oil
Salt & pepper
1–2 tbsp pasta water (reserved)
To Serve:
Rigatoni pasta (or pasta of choice)
Crushed pistachio nuts
Mint leaves for garnish
Method
Roast the Beetroot & Garlic:
Preheat oven to 200°C.
Place beetroot bulbs and garlic head on a sheet of foil. Drizzle with olive oil, season with salt and pepper, and wrap tightly.
Roast for 25–30 minutes until tender.
Prepare the Sauce:
Once roasted, squeeze the garlic cloves out of their skins and peel the beetroot.
Add roasted garlic, beetroot, goat cheese, lemon zest, cumin, chili powder, olive oil, and pasta water to a blender.
Blend until smooth and creamy.
Combine:
Cook pasta according to package instructions. Drain, reserving some pasta water.
Toss the sauce with cooked pasta, adding additional pasta water and olive oil as needed to reach your desired consistency.
Garnish & Serve:
Season to taste, then garnish with crushed pistachios and fresh mint leaves.
