1 tin of rinsed lentils
1/2 cup pumpkin seeds
1/2 cup cranberries
1/2 cup flaked almonds
1 red onion, diced
1 spring onion, chopped
1 handful parsley, chopped (feel free to add other herbs like dill or mint)
Zest of 1 lemon
Dressing:
1/2 avocado
1/2 cup Greek yogurt
1/4 cup extra virgin olive oil (EVOO)
Juice of 1 lemon
1/2 tsp minced garlic
1 tbsp honey
Salt and black pepper to taste
