Easy Pork Noodles

Serves 4 | Cook Time: 20 minutes

Ingredients:

  • 500g minced pork

  • 1 shallot, finely chopped

  • Garlic, ginger, and chili (to taste)

  • 1 tbsp coconut oil

For the sauce:

  • 1/4 cup warm water

  • 1 tbsp corn flour

  • 2 tbsp tamari

  • 2 tbsp dark soy sauce

  • 1 tbsp oyster sauce

  • 1 heaped tsp honey

Vegetables:

  • 1 capsicum, chopped

  • 1 pack broccolini, chopped

  • 2 spring onions, chopped

  • 1 bunch coriander, chopped

Other:

  • 1 packet of noodles (ramen or your choice)

Method:

  1. Heat a wok with coconut oil. Add the shallot, garlic, chili, and ginger, and fry for 1-2 minutes until fragrant.

  2. Add minced pork and cook, breaking it apart, until lightly browned.

  3. In a bowl, whisk together the sauce ingredients: warm water, corn flour, tamari, soy sauce, oyster sauce, and honey. Add this mixture to the pork and veggie mix, stirring well.

  4. Add in the chopped capsicum, broccolini, spring onions, and cooked noodles. Toss everything to combine.

  5. Stir through fresh coriander and top with additional spring onions, chili oil, or peanuts if desired.
