One-Pan Coconut & Lime Chicken

This easy, flavourful meal is a perfect weeknight dinner that’s both nutritious and packed with vibrant flavors! With zesty lime, creamy coconut, and fresh herbs, this dish comes together in just 20 minutes and leaves you with minimal clean-up. Serve it over rice and add in your favorite veggies to make it even more nourishing.

Ingredient Benefits:

Ingredients

For the Chicken Marinade:

6 chicken thighs

Juice and zest of 1 lime

1–2 tsp sesame oil

Seasonings: onion powder, garlic powder, paprika, salt, and pepper

Fresh ginger, grated

Marinate the chicken in the fridge for at least an hour. The longer it marinates, the more flavourful it will be.

For the Sauce and Veggies:

1 red onion, chopped

2–3 garlic cloves, chopped

3 cm piece of ginger, grated

1 tbsp chopped coriander stems

1 chili, chopped

1 cup mixed veggies (try capsicum, green beans, or broccolini)

1 can coconut cream

1 tbsp fish sauce

1 tbsp bone broth powder (or substitute with any broth you have)

Juice and zest of 1 lime

Method

  1. Sear the Chicken: In a hot pan, fry the marinated chicken in coconut oil until golden on both sides. Remove from the pan and set aside.

  2. Prepare the Sauce: In the same pan, sauté red onion, garlic, ginger, coriander stems, and chili until fragrant.

  3. Add Veggies and Coconut Cream: Add your chosen veggies, coconut cream, fish sauce, and broth. Stir to combine, then add the lime juice and zest.

  4. Simmer: Return the chicken to the pan and let it simmer for about 10 minutes or until fully cooked and the sauce thickens.

  5. Serve: Top with fresh coriander, extra chili, and a drizzle of coconut cream if desired.

Serve with rice for a complete meal, and enjoy the tropical flavors of coconut and lime!
