Cauliflower Soup

Ingredients:
1/2 cauliflower, roasted with olive oil, salt & pepper, garlic powder, and onion powder
1 leek, chopped
1 onion, chopped
1 carrot, chopped
2 celery stalks, chopped
2 potatoes, peeled and diced
60g butter
1 tsp mixed dried herbs
1/2 tsp nutmeg
1 tsp garlic powder
1 cup almond milk (or cow's milk)
1L chicken or vegetable stock
Method:
Roast the cauliflower: Prehe to 200°C (400°F). Toss the cauliflower in olive oil, salt, pepper, garlic powder, and onion powder. Roast for 20-25 minutes until golden and tender.
Prepare the soup base: In a large pot, melt the butter over medium heat. Add the leek, onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables are soft.
Add potatoes & spices: Stir in the diced potatoes, mixed dried herbs, nutmeg, and garlic powder. Cook for another 2 minutes.
Add liquids & cauliflower: Pour in the chicken or vegetable stock and almond milk. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the potatoes are tender.
Blend: Add the roasted cauliflower to the pot. Use an immersion blender to blend the soup until smooth and creamy. Adjust seasoning with salt and pepper to taste.
Serve & enjoy: Ladle the soup into bowls and enjoy hot. Garnish with fresh herbs or a drizzle of olive oil if desired.
