Brussels Sprouts Salad

Brussel Sprouts Salad:
3 cups Brussels sprouts, thinly sliced or shredded
1 small red onion, finely sliced
1 green apple, julienned or thinly sliced
1 red apple, julienned or thinly sliced
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1/4 cup toasted almonds, chopped
1/4 cup dried cranberries
1/4 cup shaved Parmesan cheese
For the Dressing:
3 tablespoons olive oil
2 tablespoons apple cider vinegar (ACV)
1 tablespoon lemon juice (or juice of half a lemon)
1 tablespoon wholegrain mustard
1 teaspoon honey (optional, adjust to taste)
Pinch of salt (to taste)
Pinch of black pepper (to taste)
Method:
Prepare the Salad: Shred the Brussels sprouts and thinly slice the red onion, green, and red apple. Chop the parsley and dill, and set them aside.
Toast Almonds: Toast the almonds in a dry pan until golden brown for added crunch and flavor.
Make the Dressing: Whisk together olive oil, apple cider vinegar, lemon juice, wholegrain mustard, honey, salt, and black pepper.
Assemble: In a large bowl, combine the Brussels sprouts, red onion, apples, herbs, almonds, cranberries, and shaved parmesan. Drizzle with the dressing and toss until everything is well-coated.
