Charred Asparagus with Zesty Lemon Dressing

Ingredients

1 bunch asparagus, ends trimmed
1 tbsp extra virgin olive oil
Salt & pepper to taste

For the dressing:
2 tbsp olive oil
Juice and zest of ½ lemon

¼ tsp paprika
Salt & pepper, to taste

To serve:
Crumbled feta cheese
Extra lemon zest, to finish

Method

Char the Asparagus:
Toss the asparagus with olive oil, salt, and pepper. Heat a skillet or grill pan over medium-high heat and char the asparagus for 2–3 minutes on each side, until tender and slightly crisp with golden edges.

Make the Dressing:
In a small bowl or jar, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, honey, paprika, salt, and pepper until emulsified.

Assemble the Dish:
Arrange the asparagus on a serving plate. Drizzle over the lemon dressing, top with crumbled feta, and finish with a little extra lemon zest.
