Coconut Chia Puddings with Maple Caramelised Peaches

Ingredients

Chia Pudding:

  • 1/4 cup chia seeds

  • 1 cup coconut milk (full-fat or light, depending on preference)

  • 1 tsp vanilla extract

  • 1-2 tsp maple syrup (optional, for sweetness)

Maple Caramelised Peaches:

  • 2 ripe peaches, sliced

  • 1 tbsp coconut oil

  • 2 tbsp maple syrup

  • Zest 1/2 lemon or lime

  • A pinch of sea salt

Method

  1. Prepare the Chia Pudding:

    • In a bowl or jar, whisk chia seeds, coconut milk, vanilla, and maple syrup until well combined.

    • Cover and refrigerate for at least 2 hours or overnight, stirring once after 30 minutes to prevent clumping.

  2. Caramelise the Peaches:

    • Heat coconut oil in a skillet over medium heat. Add peach slices and cook for 2-3 minutes per side until golden.

    • Drizzle maple syrup over the peaches and sprinkle with sea salt and lemon zest. Let simmer for 1-2 minutes until the syrup thickens and coats the peaches.

  3. Assemble & Serve:

    • Divide the chilled chia pudding into glasses or bowls. Top with warm caramelised peaches and a drizzle of the sticky maple syrup from the pan.

Tip: For extra crunch, sprinkle toasted coconut flakes or crushed nuts on top before serving.
