Coconut Chia Puddings with Maple Caramelised Peaches

Ingredients
Chia Pudding:
1/4 cup chia seeds
1 cup coconut milk (full-fat or light, depending on preference)
1 tsp vanilla extract
1-2 tsp maple syrup (optional, for sweetness)
Maple Caramelised Peaches:
2 ripe peaches, sliced
1 tbsp coconut oil
2 tbsp maple syrup
Zest 1/2 lemon or lime
A pinch of sea salt
Method
Prepare the Chia Pudding:
In a bowl or jar, whisk chia seeds, coconut milk, vanilla, and maple syrup until well combined.
Cover and refrigerate for at least 2 hours or overnight, stirring once after 30 minutes to prevent clumping.
Caramelise the Peaches:
Heat coconut oil in a skillet over medium heat. Add peach slices and cook for 2-3 minutes per side until golden.
Drizzle maple syrup over the peaches and sprinkle with sea salt and lemon zest. Let simmer for 1-2 minutes until the syrup thickens and coats the peaches.
Assemble & Serve:
Divide the chilled chia pudding into glasses or bowls. Top with warm caramelised peaches and a drizzle of the sticky maple syrup from the pan.
