Easy Chicken Pie

Ingredients

  • 6 chicken thighs

  • 1L full-cream milk (or coconut milk)

  • 2 cups chicken broth

  • 2 bay leaves

  • 3 garlic cloves, crushed

  • Peppercorns & salt, to taste

  • 1 tbsp extra virgin olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 6 mushrooms, sliced

  • 1 cup frozen peas

  • 1/3 cup white wine (or extra broth)

  • 1.5 cups reserved poaching liquid

  • 1/3 cup flour

  • 1/4 cup Parmesan cheese

  • 1 tsp dried Italian herbs

  • Fresh parsley & thyme, chopped

  • 2 sheets puff pastry

  • 1 egg (for egg wash)

Method

Prepare Ingredients:

1.Chop and prep all ingredients before you begin.

Poach the Chicken:
2. In a saucepan, add chicken thighs, milk, broth, bay leaves, crushed garlic, peppercorns, and salt. Poach over low-medium heat for 15 minutes, ensuring the liquid doesn’t boil. Remove chicken, shred, and set aside.

Sauté Vegetables:
3. Heat olive oil in an oven-proof skillet. Sauté onion, minced garlic, carrots, and celery until softened. Add white wine and cook for 2–3 minutes until reduced.

Combine & Thicken:
4. Stir in mushrooms, peas, shredded chicken, and 1.5 cups of the reserved poaching liquid. Gradually mix in flour, Parmesan, Italian herbs, and fresh parsley. Cook until thickened. Season to taste with salt and pepper.

Assemble & Bake:
5. Preheat oven to 185°C. Cut puff pastry sheets to fit over the skillet. Layer them over the filling and brush with egg wash. Bake for 30–40 minutes, or until the pastry is golden and crispy.

TIP: This recipe is incredibly versatile—serve it with your favourite side salad or swap the filling with plant-based alternatives. For meal prep, try baking the filling in ramekins and topping with pastry for individual pies.
