Grilled Prawn & Mango Salsa Cups

Ingredients
12 large prawns
Drizzle of extra virgin olive oil (EVOO)
Chopped parsley and garlic
1 tsp chili powder
Zest of 1/2 lemon
1 tsp honey
Salt & black pepper
Salsa
1 ripe avocado, diced
1 mango, diced
1/4 red onion, diced
Fresh dill and chives, chopped
Red chili, finely chopped (adjust to taste)
Extra virgin olive oil, lime juice, salt & pepper
Method
Prepare the Prawns: Marinate the prawns with olive oil, parsley, garlic, chili powder, lemon zest, honey, salt, and pepper. Let sit for at least 30 minutes for optimal flavor. Grill on a BBQ or skillet for about 2 minutes per side until cooked through.
Make the Salsa: Combine avocado, mango, red onion, dill, chives, and chili in a bowl. Drizzle with olive oil, lime juice, salt, and pepper; mix gently.
