Mood Boosting Baked Barramundi Parcels

This simple baked barramundi recipe is easy to make and full of fresh, vibrant flavours. Pair it with steamed rice and bok choy for a wholesome meal that supports both your body and mind.

Ingredients

  • 2 barramundi fillets

  • 2 tsp sesame oil

  • 1–2 tbsp light soy sauce

  • Juice + zest of 1 lime

  • 1/2 tsp brown sugar

  • 1 tsp fish sauce

  • 1 tsp finely grated ginger

  • 1 chilli, chopped (optional)

  • 1/2 bunch coriander

  • 1 spring onion

To Serve:

  • Steamed bok choy

  • Steamed rice

Method

Prepare the Dressing:

1.In a small bowl, mix sesame oil, soy sauce, lime juice and zest, brown sugar, fish sauce, grated ginger, and chopped chilli (if using).

Assemble the Parcels:
2. On a sheet of foil layered with baking paper, place coriander stems to form a bed for the fish fillets. Lay the barramundi on top and spoon the dressing over each fillet until fully coated.
3. Optionally, garnish with extra herbs or chilli slices for added flavour.

Bake the Barramundi:
4. Fold the foil to seal the fish in a parcel. Bake at 170°C for 12 minutes or until cooked to your liking.

Serve & Enjoy:
5. Plate the barramundi with steamed rice and bok choy for a nourishing, mood-boosting meal.

TIP: For extra crunch, top with toasted sesame seeds or crushed peanuts before serving.
