Raw Snickers Slice
This delicious treat is a throwback to my very first recipe ebook, and it’s still a favourite! Perfect for a healthy snack or dessert, this raw Snickers slice is packed with energy-boosting ingredients and will keep in the fridge for a while, making it ideal for meal prep.
Ingredients Benefits:
Almonds: High in vitamin E, magnesium, and healthy fats, which support brain health and can improve mood.
Peanuts: Rich in protein, healthy fats, and essential vitamins, they help maintain steady energy and promote muscle recovery.

Medjool dates: Naturally sweet and full of fiber, they provide a quick energy boost and aid digestion.
Peanut butter & Tahini: These provide healthy fats and protein, both of which help to stabilize blood sugar and maintain energy levels.
Coconut oil: A healthy fat that supports brain function and hormone balance.
Rice malt syrup: A low-glycemic sweetener that helps maintain stable blood sugar levels.
Dark chocolate: Packed with antioxidants and magnesium, dark chocolate is known for its mood-boosting benefits.
Ingredients:
Base:
1/2 cup almonds
1/2 cup raw peanuts
1/4 cup cacao powder
2 tbsp coconut oil, melted
1/2 cup pitted medjool dates (soaked in hot water)
Filling:
1/2 cup natural smooth peanut butter
1/4 cup tahini
1/3 cup coconut oil, melted
1/3 cup rice malt syrup
Pinch of sea salt
Topping:
80g dark chocolate, melted
1 tbsp coconut oil
Crushed peanuts
Sea salt
Method:
Prepare the base: In a food processor, blend the almonds, peanuts, cacao powder, melted coconut oil, and soaked dates until well combined. Press this mixture into the base of a lined baking dish and set aside in the freezer to firm up.
Make the filling: In a separate bowl, mix the smooth peanut butter, tahini, melted coconut oil, rice malt syrup, and sea salt until smooth. Spread this mixture over the base and return to the freezer to set for about 30 minutes.
Prepare the topping: Melt the dark chocolate and coconut oil together. Pour the chocolate over the set filling, then sprinkle crushed peanuts and a pinch of sea salt on top.
Chill: Return to the freezer and chill for an additional 1-2 hours or until fully set. Slice and enjoy!
