Affordable & Easy Fried Rice
Ingredients
250g frozen mixed veggies
50g frozen peas
2 tsp sesame oil (or any oil or butter you have)
1 tsp minced garlic
2 packets of jasmine rice (or any leftover cooked rice)
1 tbsp oyster sauce
2 tbsp tamari (or soy sauce)
2 spring onions, chopped
3 eggs
Method
Prep the Eggs: Beat the eggs in a bowl and set aside.
Sauté Veggies: In a wok or frying pan, heat the oil and add the frozen veggies and garlic. Sauté until they are warmed through.
Combine Ingredients: Add the rice, oyster sauce, and tamari, stirring for about a minute to combine.
Cook the Eggs: Push the rice mixture to one side and pour the beaten eggs into the empty side of the pan. Once the eggs are nearly cooked, break them up and mix them into the rice.
Finish & Serve: Stir through chopped spring onions. For added protein, toss in leftover cooked chicken, shrimp, or tofu.
