Malissa's Go-To Sushi Bowl Lunch

I often get asked what a quick, tasty, convenient and healthy lunch is. I am all about convenience and affordability when it comes to nourishing my body which is why I wanted to share my go-to lunch with you. Often people think that a nutritionist's lunch should (or would) be something fancy and extravagant but that is not the case at all. My tuna sushi bowl is filled with goodness but it's super quick and easy to make. The base of this salad is essentially tuna and brown rice with veg. This means it can very easily be mixed up from day to day.

I want to give you a quick little guide that you can follow to make it easy to put together nutritious lunches every day of the week using pantry staples. Aim for 1/4 protein, 1/4 carbs, 1/2 veg and 1-2tbsp of healthy fats on your plate. It's all about mixing and matching to create a balanced meal. 

Malissa's Go-To Sushi Bowl Lunch 

Serves 1 | 5 minutes

 1 packet brown rice

1 tin tuna in olive oil

1/4 cucumber, sliced

1 spring onion

1 tbsp Kimchee

1/4 avocado

1 tsp pickled ginger

2-3 seaweed

1 tsp mayo

1 tsp chilli sauce

optional to add sesame seeds.

Salt to season 

 

Method:

Heat the brown rice in a microwave for 90 seconds. Add all ingredients into a bowl and enjoy! So simple. 

TIP: Keep some of the oil from the tuna to dress the salad.
