Lemongrass Chicken & Rice Bowls

Serves 4 | Cook Time: 30 minutes

Ingredients:

For the chicken marinade:

  • 6-8 chicken thighs

  • 2 tbsp tamari

  • 1 tbsp fish sauce

  • 1 tbsp sesame oil

  • 1 heaped teaspoon minced garlic

  • 1 heaped tbsp grated ginger

  • 1 large lemongrass stalk, chopped

  • Zest & juice of 1 lime

  • 1 tsp onion powder

  • 1-2 tbsp honey (for a touch of sweetness)

For the sauce:

  • 1/4 cup boiling water

  • 1 tbsp sugar

  • 2 tbsp tamari

  • 1 tbsp fish sauce

  • Chopped chili (optional)

  • Chopped coriander root (optional)

  • Juice of 1 lime

To serve:

  • Steamed bok choy

  • Rice (jasmine or basmati works great)

  • Sliced cucumber

  • Spring onions

  • Crushed peanuts

Method:

  1. Combine the marinade ingredients in a bowl and add the chicken thighs. Mix to coat and refrigerate for at least 2 hours (the longer, the better).

  2. After marinating, cook the chicken thighs in a skillet, air fryer, or BBQ until golden brown and cooked through.

  3. For the sauce, mix the boiling water, sugar, tamari, fish sauce, chopped chili, coriander root, and lime juice until the sugar dissolves.

  4. Serve the cooked chicken on a bed of rice with steamed bok choy, cucumber, and spring onions. Drizzle with the sauce and top with crushed peanuts for added texture.
