These homemade LCM bars are a wholesome twist on the classic childhood favourite. Packed with nutrient-rich ingredients like peanut butter, cacao, and chia seeds, they’re a perfect snack for both kids and adults. Naturally sweetened with rice malt syrup, they’re free of artificial flavours and refined sugars, making them a fun, good for you treat.

Ingredients

  • 4 cups rice puffs

  • 1/2 cup natural peanut butter

  • 1/4 cup cacao powder

  • 2 tbsp chia seeds

  • 1/3 cup rice malt syrup

Method

  1. Mix the Base:
    In a large mixing bowl, combine the rice puffs and chia seeds. Set aside.

  2. Create the Binding Mixture:
    In a small saucepan, gently heat peanut butter, rice malt syrup, and cacao powder over low heat, stirring until smooth and combined.

  3. Combine & Mix:
    Pour the peanut butter mixture over the rice puff mixture. Stir well to coat evenly.

  4. Press & Shape:
    Line a square baking dish with parchment paper. Press the mixture firmly into the dish to create an even layer.

  5. Set & Slice:
    Place the dish in the fridge to set for at least 2 hours. Once firm, cut into bars or squares.

TIP: These bars can be stored in an airtight container in the fridge for up to a week. Perfect for lunchboxes, snacks, or a quick energy boost!
