Peanut Chocolate Energy Balls

These energy balls are my go-to snack when I need something sweet, satisfying, and packed with nutrients. They’re rich in protein, healthy fats, and key mood-boosting minerals like magnesium and potassium, making them the perfect solution for that mid-afternoon slump.

  • Almonds: A great source of magnesium and vitamin E, almonds help reduce stress and boost brain health.

  • Dates: Packed with natural sugars for quick energy, plus fibre to help stabilise blood sugar levels.

  • Peanut Butter: Rich in healthy fats and protein to keep you satisfied and energised.

  • Cacao Powder: Loaded with antioxidants and compounds that promote the release of feel-good endorphins.

  • Chia Seeds: Provide omega-3 fatty acids and fibre, both of which support brain health and stable energy.

Ingredients

  • 1 cup almonds

  • 1 cup pitted dates (soaked in warm water for 20 minutes)

  • 1/2 cup natural crunchy peanut butter

  • 1/3 cup cacao powder

  • 1 tbsp chia seeds

  • 1 tbsp raw honey

  • 1/2 cup crushed peanuts (for garnish)

Method

  1. Prep the Dates:

    • Soak the pitted dates in warm water for at least 20 minutes. Drain and reserve the soaking water.

  2. Process the Almonds:

    • Add almonds to a food processor and process until they resemble a fine meal.

  3. Combine Ingredients:

    • Add the soaked dates, peanut butter, cacao powder, chia seeds, honey, and 3–4 tbsp of the reserved date water to the processor.

    • Blend until the mixture forms a sticky dough (add more date water if needed).

  4. Shape & Garnish:

    • Roll 1-tbsp portions of the mixture into balls.

    • Coat each ball in crushed peanuts for extra crunch.

  5. Set & Enjoy:

    • Place the energy balls in the fridge to set for at least 30 minutes before enjoying.

TIP: Make a batch at the start of the week and store them in an airtight container in the fridge—they’ll keep fresh all week! Perfect for a no-mess, no-stress snack that keeps you going.
