Peanut Chocolate Energy Balls
These energy balls are my go-to snack when I need something sweet, satisfying, and packed with nutrients. They’re rich in protein, healthy fats, and key mood-boosting minerals like magnesium and potassium, making them the perfect solution for that mid-afternoon slump.

Almonds: A great source of magnesium and vitamin E, almonds help reduce stress and boost brain health.
Dates: Packed with natural sugars for quick energy, plus fibre to help stabilise blood sugar levels.
Peanut Butter: Rich in healthy fats and protein to keep you satisfied and energised.
Cacao Powder: Loaded with antioxidants and compounds that promote the release of feel-good endorphins.
Chia Seeds: Provide omega-3 fatty acids and fibre, both of which support brain health and stable energy.
Ingredients
1 cup almonds
1 cup pitted dates (soaked in warm water for 20 minutes)
1/2 cup natural crunchy peanut butter
1/3 cup cacao powder
1 tbsp chia seeds
1 tbsp raw honey
1/2 cup crushed peanuts (for garnish)
Method
Prep the Dates:
Soak the pitted dates in warm water for at least 20 minutes. Drain and reserve the soaking water.
Process the Almonds:
Add almonds to a food processor and process until they resemble a fine meal.
Combine Ingredients:
Add the soaked dates, peanut butter, cacao powder, chia seeds, honey, and 3–4 tbsp of the reserved date water to the processor.
Blend until the mixture forms a sticky dough (add more date water if needed).
Shape & Garnish:
Roll 1-tbsp portions of the mixture into balls.
Coat each ball in crushed peanuts for extra crunch.
Set & Enjoy:
Place the energy balls in the fridge to set for at least 30 minutes before enjoying.
