Rocket, Orange & Fennel Salad

This light and refreshing salad combines peppery rocket, juicy oranges, and crisp fennel with the crunch of toasted hazelnuts. Tossed in a zesty wholegrain mustard dressing, it’s the perfect side dish for summer gatherings or festive occasions.

Ingredients

  • 4 cups rocket leaves

  • 1 large fennel bulb, thinly sliced

  • 2 oranges, peeled and segmented

  • 1/3 cup crushed toasted hazelnuts

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp wholegrain mustard

  • 1 tbsp fresh orange juice

  • 1 tsp honey or maple syrup

  • Salt and pepper, to taste

Method

  1. Prepare the Salad Base:
    In a large bowl, combine the rocket leaves, sliced fennel, and orange segments.

  2. Toast the Hazelnuts:
    Lightly toast the hazelnuts in a dry skillet over medium heat for 3–4 minutes. Allow to cool slightly before crushing.

  3. Make the Dressing:
    In a small bowl, whisk together olive oil, wholegrain mustard, orange juice, honey, salt, and pepper until emulsified.

  4. Assemble & Toss:
    Pour the dressing over the salad and toss gently to combine.

  5. Garnish & Serve:
    Sprinkle the crushed hazelnuts over the salad just before serving for a delicious crunch.

TIP: This salad pairs beautifully with roasted meats or can be enjoyed on its own as a light, nutritious meal. For a festive touch, try adding pomegranate seeds for extra colour and sweetness!
