Rocket, Orange & Fennel Salad

Ingredients
4 cups rocket leaves
1 large fennel bulb, thinly sliced
2 oranges, peeled and segmented
1/3 cup crushed toasted hazelnuts
For the Dressing:
2 tbsp olive oil
1 tbsp wholegrain mustard
1 tbsp fresh orange juice
1 tsp honey or maple syrup
Salt and pepper, to taste
Method
Prepare the Salad Base:
In a large bowl, combine the rocket leaves, sliced fennel, and orange segments.Toast the Hazelnuts:
Lightly toast the hazelnuts in a dry skillet over medium heat for 3β4 minutes. Allow to cool slightly before crushing.Make the Dressing:
In a small bowl, whisk together olive oil, wholegrain mustard, orange juice, honey, salt, and pepper until emulsified.Assemble & Toss:
Pour the dressing over the salad and toss gently to combine.Garnish & Serve:
Sprinkle the crushed hazelnuts over the salad just before serving for a delicious crunch.
