When you’re feeling lazy but still want something wholesome, this 15-minute immune-boosting dumpling soup is the perfect dish. Packed with ingredients that support your immune system and comfort you in a bowl, it's quick and satisfying. You can easily swap out the dumplings for your favourite variety, and I used ramen noodles for an extra heartiness.

Immune-Boosting Dumpling Soup
Serves 2-4 | Cook Time: 15 minutes
Ingredients:
1-2 tsp sesame oil
2 tbsp grated ginger
2 garlic cloves, minced
1 tbsp coriander stems, chopped
3 spring onions, chopped
4 cups chicken stock
1/2 cup shiitake mushrooms, sliced
1 cup water
2 tbsp tamari
1 tbsp fish sauce
1 tsp rice wine vinegar
1 bunch bok choy, chopped
12 dumplings (choose your favorite variety)
Method:
Heat sesame oil in a large pot over medium heat. Add ginger, garlic, coriander stems, and spring onions, and sauté for 1-2 minutes until fragrant.
Pour in chicken stock and water, and bring to a boil.
Add shiitake mushrooms, tamari, fish sauce, and rice wine vinegar. Simmer for 5 minutes.
Add bok choy and dumplings, and cook for another 5-7 minutes or until the dumplings are cooked through.
Taste and adjust seasoning if needed.
Serve hot and enjoy this immune-boosting bowl of comfort!
