Sicilian Potato Salad

This vibrant and zesty Sicilian Potato Salad is a refreshing twist on the classic. Packed with tender low-carb potatoes, crisp string beans, and juicy cherry tomatoes, it's tossed in a bright lemon and herb dressing that makes it perfect for picnics, barbecues, or as a festive side dish.

Ingredients

  • 1kg Low Carb Potatoes

  • 250g string beans

  • 1 punnet cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1 lemon (zest and juice)

  • 1 bunch dill, finely chopped

For the Dressing:

  • Juice and zest of 1 lemon

  • 2 tbsp olive oil

  • 1/2 tsp chili flakes

  • 1/2 tsp dried oregano

  • Salt and black pepper, to taste

Method

Cook the Potatoes:

1.Quarter and boil the potatoes in salted water until fork-tender (10–12 minutes). Drain and slice in half.

Blanch the Beans:
2. Trim string beans and blanch in boiling water for 2 minutes. Transfer to an ice bath to cool, then drain.

Prepare the Dressing:
3. In a small bowl, whisk together the lemon juice, olive oil, chili flakes, oregano, salt, and black pepper.

Combine Ingredients:
4. In a large mixing bowl, combine the sliced potatoes, beans, cherry tomatoes, red onion, dill, and lemon zest.

Toss and Serve:
5. Drizzle the dressing over the salad and toss gently to coat. Adjust seasoning if needed.

TIP: This salad is best served slightly chilled or at room temperature. Add capers or olives for a Sicilian touch, or pair it with grilled fish or chicken for a complete meal.
