Ingredients
2 ripe bananas, mashed
1 cup rolled oats
1 cup almond meal
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
2 eggs, lightly beaten
1/4 cup honey or maple syrup
1/4 cup almond milk
1/4 cup chopped almonds (optional, for topping)
Method
Preheat the Oven:
Preheat your oven to 180°C (350°F) and line a muffin tin with 10 paper cases.Mix the Dry Ingredients:
In a large bowl, combine the oats, almond meal, baking powder, baking soda, and cinnamon.Prepare the Wet Ingredients:
In a separate bowl, mix the mashed bananas, eggs, honey (or maple syrup), and almond milk until well combined.Combine & Fold:
Add the wet ingredients to the dry ingredients and gently fold until just combined. Be careful not to over-mix.Portion the Batter:
Divide the batter evenly among the muffin cases. If desired, sprinkle chopped almonds on top for added crunch.Bake:
Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.Cool & Enjoy:
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
