Ingredients
For the Paste:
1 piece turmeric, peeled
1 knob ginger, peeled
1 red chili
2 garlic cloves
1/2 tsp black pepper
1 tbsp coconut oil
For the Sauce:
200 mL coconut cream
100 mL broth or stock
1 lemongrass stalk, bruised
Juice of 1 lime
Salt and black pepper, to taste

2 chicken breasts or thighs (can substitute with fish, prawns, or tofu)
Method
1. Make the Paste:
In a food processor or mortar and pestle, blend turmeric, ginger, chili, garlic, black pepper, and coconut oil into a smooth paste.
2. Fry the Paste:
Heat coconut oil in a pan over medium heat. Fry the paste for 2–3 minutes until fragrant.
3. Simmer the Sauce:
Add coconut cream, broth, lemongrass, lime juice, salt, and black pepper. Simmer gently until the sauce thickens, about 10–15 minutes. Strain the sauce into another pan to remove any large chunks.
4. Cook the Protein:
While the sauce simmers, cook the chicken in a skillet until golden and cooked through.
5. Serve:
Plate the chicken with the rich turmeric sauce and serve with steamed rice or your choice of grain. Garnish with fresh herbs if desired.
