Raspberry & Lime Muffins
Ingredients:
2 cups flour of choice (almond, plain, buckwheat, etc.)
½ cup brown sugar
2 tsp cinnamon
1 cup frozen or fresh raspberries
1 egg
1 tsp vanilla
½ cup Greek yogurt
¼ cup olive oil
1 tsp baking powder
Pinch of sea salt
Zest of 1 whole lime
¼ cup almond milk
Instructions
Preheat the oven to 180°C (350°F).
In a large bowl, mix the flour, brown sugar, cinnamon, baking powder, and sea salt.
In another bowl, combine the egg, vanilla, Greek yogurt, olive oil, lime zest, and almond milk.
Fold the wet ingredients into the dry ingredients, then gently stir in the raspberries.
Divide the batter into a muffin tin lined with muffin papers.
Bake for 25 minutes or until completely cooked through.
