Homemade Gnocchi

Soft, pillowy gnocchi made from scratch, it doesn’t get much better than this! This simple recipe uses just three main ingredients to create delicious gnocchi that’s perfect for pairing with your favourite sauce. Whether you go for a classic tomato sauce, creamy mushroom, or browned butter and sage, the possibilities are endless.

Ingredients

  • 4 medium potatoes (about 1 kg), starchy variety like Russet

  • 1 cup plain flour, plus extra for dusting

  • 1 egg, lightly beaten

  • 2-3 tbsp parmesan cheese

  • 1/4 tsp freshly grated nutmeg (optional)

  • Pinch of salt

Method

  1. Cook the Potatoes:
    Boil the potatoes whole, in their skins, until fork-tender (about 20–25 minutes). Drain, allow to cool slightly, and peel.

  2. Mash the Potatoes:
    Pass the potatoes through a ricer or mash them until completely smooth. Let them cool completely to avoid sticky dough.

  3. Form the Dough:
    On a floured surface, mound the mashed potatoes. Sprinkle with salt, nutmeg parmesan and flour, then create a well in the center. Add the beaten egg and gently mix together, kneading lightly until a soft, slightly sticky dough forms. Avoid over-kneading to keep the gnocchi tender.

  4. Shape the Gnocchi:
    Divide the dough into 4 portions. Roll each into a long rope about 2 cm in diameter, then cut into 2 cm pieces. If desired, roll each piece along the back of a fork or gnocchi board to create ridges.

  5. Cook the Gnocchi:
    Bring a large pot of salted water to a boil. Drop in the gnocchi in batches and cook until they float to the surface (about 2–3 minutes). Use a slotted spoon to remove and transfer to a serving dish.

  6. Sauce & Serve:
    Toss the gnocchi with your favourite sauce and serve immediately.

TIP: This recipe is a blank canvas! Pair your gnocchi with a simple marinara sauce, creamy mushroom sauce, or even a drizzle of olive oil with fresh herbs and Parmesan. For leftovers, pan-fry the gnocchi for a crispy twist!
